This is the perfect mountain cookie. Filled with cranberries, coconut, walnuts and oatmeal, this cookie is fit for your next mountain adventure even if that adventure is on your couch with a glass of cold milk. Yummy.
Cranberry-Walnut Oatmeal Cookie
1 ¼ cups unsalted butter or margarine, softened
¾ cup firmly packed brown sugar
½ cup sugar
1 large egg
1 teaspoon vanilla extract
3 cups quick cooking oats, uncooked
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 cup dried cranberries
¾ cup chopped walnuts
½ cup shredded coconut
BEAT butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Add egg and vanilla, beating until mixture is blended.
COMBINE oats and next 6 ingredients; gradually add to butter mixture, beating at a low speed until blended. Stir in cranberries, walnuts and coconut.
BAKE at 350 degrees for 12 minutes or until browned. Let cookies cool on baking sheets 10 minutes
